This course is of a half day duration and would be of value to a range of personnel from operatives and senior operatives to team leaders and supervisors, depending on their particular role and responsibilities.

Basic principles of Modified Atmosphere technology in food preservation are studied to allow an understanding and identification of the CCP’s in the process. Operation and control of MAP systems is studied along with gas supply/analysis, seal integrity and maintenance, and cycle times to allow the student to ensure that the product is made to specification and that output is optimised.

We also run a one day course, on request, which would be of value to a range of personnel from operatives and senior operatives to team leaders and supervisors, depending on their particular role and responsibilities.

The student will gain an overview of the use and applications of MAP in their business. The operation of MAP will be covered along with the necessary testing procedures to ensure the food products are safe.
